Foodservice tips for better chips
Keep your oil at the right temperature.
- Cook your chips between 175 degrees and 180 degrees centigrade for 3-4 minutes
- Use a digital thermometer to check the temperature of the oil each week
Shake off excess oil and let the basket hang for 20 seconds to allow extra oil to drain off.
Filter oil everyday and discard oil when it is showing signs of degradation. Signs of degradation include but are not limited to foaming, burnt taste and smoking at low temperatures.
